Which coffee makers are ideal for these coffees?

They work excellently in Italian, mocha, espresso, super automatic, American and French press coffee makers. Prepare them black, with milk or in Americano; the choice is yours. Enjoy versatility and quality in every cup, no matter the occasion.

What preparation recipes do you recommend for filter coffees?

In order for you to enjoy your coffee to the fullest, salvatge has developed specific recipes to prepare these filter coffees. We offer two recipes: one for conical coffee makers (such as the V60) and the other for flat bottom coffee makers (such as the Kalita). However, you can adapt these recipes to other preparation methods, such as immersion coffee makers. Remember that these recipes are a starting point and may require adjustments depending on the equipment you use and the characteristics of the water. Also, keep in mind that they are adapted to the Rubens roasting style, so we do not guarantee that they are universal. Enjoy experimenting with brewing!
 

How do we roast our traditional coffees and why is it important?

We offer two main agricultural processes: the natural process and the fermented washed process.
The cultivation of our coffees begins with a meticulous selection of regions that offer ideal conditions to develop unique and distinctive flavors. These regions are frequently found at high altitudes with cool climates and moderate rainfall, encompassing outstanding areas of Colombia, El Salvador, Kenya, Brazil, Honduras, Peru, Costa Rica, Ethiopia, Rwanda and other parts of the world where coffee plantations thrive. Here, coffee trees are carefully cultivated in soils rich in volcanic minerals, using sustainable practices that promote biodiversity and protect the plants with natural shade provided by taller trees.

Natural Process: The beans are harvested by hand when they reach optimum maturity on farms located in regions of high altitude and tropical climate. The beans are then dried naturally in patios or canopies, or in industrial dryers depending on local climatic conditions. This method takes advantage of the specific agro-environmental characteristics of the growing areas, where the combination of altitude and tropical climate favors the development of a natural sweetness intensified by a higher concentration of sugars on the bean surface. It is ideal for those who prefer a coffee with a sweet and pronounced profile, highlighting the unique characteristics of the terroir.
Fermented Washing Process: Begins with the pulping of the beans, followed by a controlled fermentation process to eliminate the mucilage from the parchment. This method is practiced in farms located in regions with specific agro-environmental conditions that favor the production of coffee beans with exceptional quality and a distinctive flavor. It is preferred by small producers who value complexity and clarity in the coffee profile, highlighting the unique qualities of the environment in which it is grown.
