What preparation recipes do you recommend for filter coffees?

To ensure you get the most out of your coffee, Salvatge has crafted specific recipes for filter brewing methods. We offer two distinct recipes: one for conical coffee makers, such as the V60, and another for flat-bottom coffee makers, like the Kalita. These guidelines can also be adapted for other brewing methods, including immersion coffee makers.

Please view these recipes as starting points. You might need to tweak them based on your equipment and water characteristics. Additionally, these recipes are tailored to Rubens' roasting style, so they may not be universally applicable.

How do we roast our traditional coffees and why is it important?

We apply a medium roast, known as city style, for 12 to 13 minutes. We carefully modulate temperature and speed to balance all sensory characteristics, resulting in a coffee with a thick body, low acidity and a clean finish.

What does "gentle flavor" mean in our coffees? 

The "gentle flavor" allows you to enjoy multiple cups throughout the day without overwhelming your palate, providing a consistently pleasant experience with each sip.

How are our traditional coffees grown?

We offer two primary agricultural processes: the natural process and the washed fermented process.

Our coffee cultivation starts with a meticulous selection of regions that provide ideal conditions for developing unique and distinctive flavors. These regions are often situated at high altitudes with cool climates and moderate rainfall, including notable areas in Colombia, El Salvador, Kenya, Brazil, Honduras, Peru, Costa Rica, Ethiopia, Rwanda, and other parts of the world where coffee thrives. Here, coffee plants are carefully nurtured in mineral-rich volcanic soils, using sustainable practices that promote biodiversity and protect the plants with natural shade from taller trees.

Natural Process: Coffee cherries are hand-harvested at peak ripeness from farms located in high-altitude, tropical climates. The beans are then dried naturally on patios or raised beds, or in industrial dryers depending on local weather conditions. This method takes advantage of the specific agro-environmental conditions of the growing regions, where the combination of altitude and tropical climate enhances the natural sweetness of the beans, resulting in a coffee with a pronounced, sweet profile that highlights the unique characteristics of the terroir.

Washed Fermented Process: This process begins with depulping the beans, followed by a controlled fermentation to remove the mucilage from the parchment layer. This method is practiced on farms in regions with specific agro-environmental conditions that contribute to exceptional bean quality and distinctive flavor. It is favored by small producers who value the complexity and clarity of the coffee profile, emphasizing the unique qualities of the growing environment.
